Food and drink Place 6 chicken breasts (individually) between plastic wrap and pound them gently with a meat pounder or rolling pin to be no more than one-half-inch thick. Dip chicken, 1 piece at a time, in egg whites, letting excess whites drip, then dredge in sesame seeds. Transfer coated breasts to a waxed-paperlined baking tray. In a large skillet, heat onethird cup of vegetable oil until hot, but not smoking. Reduce heat to moderate and fry 3 pieces of chicken at a time, turning over once with tongs, until sesame coating is golden and chicken is cooked through, about 10 to 12 minutes. Transfer chicken to a plate lined with paper towel. Repeat until all breasts are done. In a small saucepan, combine 2 cups of Dijon mustard with one cup of raw honey and one cup of Hellmann’s Mayonnaise. Heat until just heated through. Serve Sesame Chicken in Dijon Drizzle with your favourite rice. The wine’s toasty notes complement the golden sesame coating. The wine’s acidity marries well with the Dijon drizzle. Had I not tried this wine and dish together, I would have surmised that the honey in the drizzle would be too sweet for the wine. But this is not the case.
