Cheddar Chili High-Protein Fibre Biscuits Makes 6 Ingredients 1 ½ cups fat-free cottage cheese 2 teaspoons olive or avocado oil 2 large eggs + 1 for egg wash 2 teaspoons apple cider vinegar 2 cups almond flour 2 tbsp psyllium (+ 1 tbsp more if needed) 1 teaspoon sea salt 1 tablespoon baking powder ¾ cup + ¼ cup extra old cheddar 1 red Thai chili pepper or jalapeno pepper, seeded, cut in half horizontally Fresh chives for garnish (optional) Food & Drink Instructions 1. Preheat your oven to 375°F (180°C). 2. In a mini mixer or blender combine cottage cheese, oil (if using fat-free cottage cheese), eggs and apple cider vinegar. 3. Transfer to a mixing bowl. 4. Add almond flour, psyllium, salt and baking powder. Mix into a dough. If the dough is too wet, add a tsp of more psyllium at a time. Dough should be firm to form a moist ball. 5. Cover the bowl and refrigerate, letting the dough stiffen for 30 minutes. (The dough should hold enough shape that it can be molded into biscuits.) 6. Fold ¾ cup of cheddar into the firm dough. 7. Dice half of the chili pepper and fold into the dough. 8. Line the baking sheet with parchment paper. 9. Divide the dough into 6 equal portions. Roll each one into a ball. Flatten slightly on top to form a hockey-puck shape. Set them on parchment. 10. Whisk the egg. Brush egg wash on top of each biscuit. 11. Slice the other half of the chili pepper into thin slices. (Use another chili pepper if needed.) 12. Sprinkle each biscuit with a pinch of cheddar. Top with 2 to 3 chili pepper rounds. 13. Bake for 20-25 minutes or until golden brown. Let cool. 14. Garnish each with fresh chives. 15. Serve with a fresh salad drizzled in apple cider vinegar. Wine suggestion: If you are not concerned with your blood sugar levels, an off-dry Riesling is ideal. The wine’s bright acidity will offset the saltiness of the cheddar in the biscuits, while its sweetness will offset the heat and spice from the chilies. Think Canadian off-dry Riesling or off-dry Gewurztraminer. However, if you’re looking to reduce and/or balance your blood sugar levels, then you’ll want to refrain from any wine that contains sugar. Instead, purchase a bone-dry Riesling or Gewurztraminer. Add a pinch of monk fruit sweetener to your glass of wine. Adding this little bit of natural sweetener achieves the same result.
