Reduce heat to simmer and add ribs. Simmer ribs for an hour, or until meat is tender. Add bok choy. Simmer until bok choy is tender. Meanwhile, place a one- to two-person serving of Udon noodles into a large serving bowl and pour boiling water over the noodles until they separate. Once separated, pour off the boiling water.
